- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, chopped
- 1 cup fresh spinach, chopped
- 1/2 cup shredded mozzarella cheese
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Cut a pocket into each chicken breast, being careful not to cut all the way through.
- In a bowl, mix roasted red peppers, spinach, and mozzarella cheese.
- Stuff each chicken breast with the mixture and secure with toothpicks.
- Rub chicken with olive oil and season with garlic powder, oregano, salt, and pepper.
- Place chicken in a baking dish and bake for 25-30 minutes or until fully cooked.
- Remove toothpicks before serving.
Notes
- Use fresh spinach for best results.
- Check chicken internal temperature reaches 165°F (74°C).
- Let chicken rest for 5 minutes before slicing.
