Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potato rounds with olive oil, salt, and pepper.
- Arrange in a single layer on a baking sheet.
- Roast for 20 minutes, flip, then roast another 10-15 minutes until tender.
- Drizzle with honey and sprinkle feta on top.
- Garnish with fresh thyme if desired.
- Serve warm.
