- 4 boneless, skinless chicken
- 1 cup crumbled feta cheese
- 1 cup fresh spinach, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Flatten chicken to an even thickness.
- In a bowl, mix feta cheese, spinach, sun-dried tomatoes, and garlic.
- Spread the mixture evenly over each chicken breast.
- Roll up the chicken tightly and secure with toothpicks.
- Brush with olive oil and sprinkle with oregano, salt, and pepper.
- Place in a baking dish and bake for 25-30 minutes until chicken is cooked through.
- Let rest for 5 minutes before slicing and serving.
