Description
Traditional Irish dish for St. Patrick’s Day.
Ingredients
Scale
- 2 lbs corned beef
- 1 head cabbage, chopped
- 4 large carrots, peeled and cut into chunks
- 6 large potatoes, peeled and quartered
- 1 onion, quartered
- 2 cups beef broth
- 1 tablespoon mustard
- 1 tablespoon brown sugar
- Salt and pepper to taste
Instructions
- Place corned beef in a large pot.
- Add beef broth, onion, mustard, and brown sugar.
- Cover and simmer for 2 hours.
- Add potatoes and carrots, cook for 30 minutes.
- Add cabbage, cook for another 15 minutes.
- Slice corned beef and serve with vegetables.
Notes
- Adjust seasoning to taste.
- Leftovers can be used for sandwiches.
- Serve with Irish soda bread.
