Ingredients

  • 1 head cabbage, chopped
  • 4 large carrots, peeled and cut into chunks
  • 6 large potatoes, peeled and quartered
  • 1 onion, quartered
  • 2 cups beef broth
  • 1 tablespoon mustard
  • 1 tablespoon brown sugar
  • Salt and pepper to taste

Instructions

  1. Place corned beef in a large pot.
  2. Add beef broth, onion, mustard, and brown sugar.
  3. Cover and simmer for 2 hours.
  4. Add potatoes and carrots, cook for 30 minutes.
  5. Add cabbage, cook for another 15 minutes.
  6. Slice corned beef and serve with vegetables.
