Ingredients

- 2 pounds corned beef
- 1 head of cabbage, chopped
- 4 carrots, peeled and sliced
- 6 potatoes, peeled and cubed
- 1 onion, chopped
- 4 cups beef broth
- 1 tablespoon mustard
- Salt and pepper to taste
Instructions
- Place corned beef in a large pot.
- Add beef broth, mustard, salt, and pepper.
- Bring to a boil, then reduce to a simmer.
- Cook for 2 hours, skimming off any foam.
- Add potatoes, carrots, and onion.
- Simmer for another 30 minutes.
- Add cabbage and cook for an additional 15 minutes.
- Remove from heat and let rest before slicing.
Notes
- Serve with whole grain bread.
- Pair with Irish beer for a complete experience.
- Leftovers can be used in sandwiches.
