- 1 lb fresh salmon, skinless and deboned
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 ripe avocado
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
- 1/4 tsp cumin
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine salmon, breadcrumbs, egg, parsley, garlic, salt, and pepper. Mix well.
- Shape the mixture into small balls, about 1 inch in diameter.
- Heat olive oil in a pan and lightly brown the salmon balls on all sides.
- Transfer to a baking sheet and bake for 10-12 minutes until cooked through.
- For the sauce, blend avocado, Greek yogurt, lemon juice, and cumin until smooth.
- Serve salmon balls warm with the creamy avocado sauce.
