Description
A simple and nutritious salmon spinach pasta dish that is quick to prepare and packed with flavor.
Ingredients

- 8 oz pasta (penne or fusilli)
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1/2 lb salmon fillet, skin removed and cut into chunks
- 2 cups fresh spinach
- 1/4 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add garlic and sauté for 30 seconds.
- Add salmon chunks and cook for 3-4 minutes until opaque.
- Stir in spinach and cook until wilted, about 2 minutes.
- Pour in heavy cream and stir to combine.
- Add cooked pasta, parmesan, salt, black pepper, and red pepper flakes. Toss well.
- Serve immediately.
Notes
- For a lighter version, substitute heavy cream with Greek yogurt.
- Use whole wheat pasta for extra fiber.
- Fresh salmon works best, but canned salmon can be used in a pinch.
