  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable or chicken broth
  • 1 (32 oz) jar sauerkraut, drained
  • 1 potato, peeled and diced
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste
  • 2 tablespoons fresh dill, chopped (optional)
  • Sour cream for serving (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Sauté for about 5 minutes until vegetables are softened.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Pour in the vegetable or chicken broth and bring to a simmer.
  4. Add the drained sauerkraut, diced potato, caraway seeds, salt, and pepper. Stir to combine.
  5. Cover and let the soup simmer for 25-30 minutes, or until the potatoes are tender.
  6. Taste and adjust seasoning as needed. If desired, stir in fresh dill just before serving.
  7. Ladle the soup into bowls and top with a dollop of sour cream if using.
