- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups vegetable or chicken broth
- 1 (32 oz) jar sauerkraut, drained
- 1 potato, peeled and diced
- 1 teaspoon caraway seeds
- Salt and pepper to taste
- 2 tablespoons fresh dill, chopped (optional)
- Sour cream for serving (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Sauté for about 5 minutes until vegetables are softened.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Pour in the vegetable or chicken broth and bring to a simmer.
- Add the drained sauerkraut, diced potato, caraway seeds, salt, and pepper. Stir to combine.
- Cover and let the soup simmer for 25-30 minutes, or until the potatoes are tender.
- Taste and adjust seasoning as needed. If desired, stir in fresh dill just before serving.
- Ladle the soup into bowls and top with a dollop of sour cream if using.
