A simple and flavorful dish combining sausage and sweet potatoes with a sweet and savory honey garlic sauce.

- 2 large sweet potatoes, peeled and cubed
- 4 sausages (your choice of type), sliced
- 2 tbsp olive oil
- 1/4 cup honey
- 3 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with 1 tbsp olive oil, paprika, salt, and pepper. Spread on a baking sheet.
- Roast sweet potatoes for 20 minutes.
- While sweet potatoes roast, heat remaining olive oil in a pan over medium heat. Cook sausages until browned, about 5-7 minutes.
- In a small bowl, mix honey, garlic, soy sauce, and apple cider vinegar to make the sauce.
- Add cooked sausages to the baking sheet with sweet potatoes. Pour the sauce over everything.
- Return to the oven and bake for another 10 minutes.
- Garnish with fresh parsley if desired. Serve hot.
Notes
- For a spicier version, add red pepper flakes to the sauce.
- Use pre-cooked sausages to save time.
- Store leftovers in an airtight container for up to 3 days.
