Description

A simple and flavorful dish combining sausage and sweet potatoes with a sweet and savory honey garlic sauce.


Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 4 sausages (your choice of type), sliced
  • 2 tbsp olive oil
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with 1 tbsp olive oil, paprika, salt, and pepper. Spread on a baking sheet.
  3. Roast sweet potatoes for 20 minutes.
  4. While sweet potatoes roast, heat remaining olive oil in a pan over medium heat. Cook sausages until browned, about 5-7 minutes.
  5. In a small bowl, mix honey, garlic, soy sauce, and apple cider vinegar to make the sauce.
  6. Add cooked sausages to the baking sheet with sweet potatoes. Pour the sauce over everything.
  7. Return to the oven and bake for another 10 minutes.
  8. Garnish with fresh parsley if desired. Serve hot.

Notes

  • For a spicier version, add red pepper flakes to the sauce.
  • Use pre-cooked sausages to save time.
  • Store leftovers in an airtight container for up to 3 days.
