Description
A hearty soup with sausage and cheese-filled tortellini.
Ingredients

- 1 lb Italian sausage
- 1 package (9 oz) cheese tortellini
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup chopped spinach
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Brown sausage in a pot over medium heat.
- Add onion and garlic, cook until softened.
- Pour in chicken broth and diced tomatoes.
- Stir in tortellini and Italian seasoning.
- Simmer for 10 minutes.
- Add spinach and cook until wilted.
- Season with salt and pepper.
- Serve hot.

- Use spicy sausage for extra heat.
- Fresh tortellini cooks faster than frozen.
- Add grated Parmesan before serving.
