Ingredients

- 3 lbs beef chuck roast
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 4 garlic cloves, minced
- 1 tbsp grated ginger
- 1 tbsp sesame oil
- 1 onion, sliced
- 2 carrots, chopped
- 1 cup beef broth
- 1 tbsp gochujang (Korean red pepper paste)
- 1 tsp black pepper
Instructions
- Season the beef roast with salt and pepper.
- In a bowl, mix soy sauce, brown sugar, garlic, ginger, sesame oil, and gochujang.
- Sear the roast in a hot pan until browned on all sides.
- Place the roast in a slow cooker with onions and carrots.
- Pour the sauce mixture and beef broth over the roast.
- Cook on low for 8 hours or high for 4 hours.
- Shred the meat and serve with the cooking juices.
Notes
- Adjust gochujang for desired spice level.
- Serve with steamed rice or vegetables.
- Leftovers can be stored for up to 3 days.
