Ingredients

- 1 cup rolled oats
- 2 cups water or broth
- 1/4 teaspoon salt
- 1 tablespoon olive oil
- 1 cup, chopped spinach or kale
- 2 soft boiled eggs
- to taste black pepper
- 1/4 cup grated cheese (optional)
- 1/2 sliced avocado (optional)
- to taste chili flakes or hot sauce (optional)
Instructions
- In a medium saucepan, combine rolled oats, water or broth, and salt. Bring to a boil over medium heat.
- Reduce the heat and let it simmer, stirring occasionally until the oats are cooked, about 5-7 minutes.
- While the oats are cooking, prepare the soft boiled eggs. Bring a small pot of water to a boil, gently add the eggs, and cook for 6-7 minutes. Remove and place in cold water to stop cooking.
- In the last few minutes of cooking the oats, stir in the chopped spinach or kale until wilted.
- Once the oats are cooked, remove from heat and stir in olive oil for extra creaminess.
- To serve, divide the savory oatmeal into bowls, top with soft boiled eggs (peeled and halved), and add optional toppings like cheese, avocado, and chili flakes or hot sauce.
