Instructions

  1. In a medium saucepan, combine rolled oats, water or broth, and salt. Bring to a boil over medium heat.
  2. Reduce the heat and let it simmer, stirring occasionally until the oats are cooked, about 5-7 minutes.
  3. While the oats are cooking, prepare the soft boiled eggs. Bring a small pot of water to a boil, gently add the eggs, and cook for 6-7 minutes. Remove and place in cold water to stop cooking.
  4. In the last few minutes of cooking the oats, stir in the chopped spinach or kale until wilted.
  5. Once the oats are cooked, remove from heat and stir in olive oil for extra creaminess.
  6. To serve, divide the savory oatmeal into bowls, top with soft boiled eggs (peeled and halved), and add optional toppings like cheese, avocado, and chili flakes or hot sauce.
