- 1 cup rolled oats
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 1/2 cup chopped nuts (almonds, walnuts, or your choice)
- 1/2 cup dried fruit (raisins, cranberries, or apricots)
- 1/4 cup mini chocolate chips (optional)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large mixing bowl, combine the rolled oats, almond butter, and honey (or maple syrup). Mix until well combined.
- Stir in the chopped nuts, dried fruit, chocolate chips (if using), vanilla extract, and salt.
- Spread the mixture evenly in the prepared baking dish, pressing down firmly to ensure it holds together.
- Bake in the preheated oven for 15-20 minutes or until the edges start to turn golden brown.
- Remove from the oven and let cool completely in the dish before slicing into bars.
- Store in an airtight container in the refrigerator for up to a week.
Notes
- Feel free to customize with your favorite nuts, seeds, and dried fruits.
- These bars can also be frozen for longer storage. Just wrap each individually in plastic wrap and freeze.
