Ingredients

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup raisins or currants (optional)
- Extra flour for dusting
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the raisins or currants.
- Turn the dough out onto a lightly floured surface and knead gently just until it comes together.
- Pat the dough into a 1-inch thick round. Cut into 8 wedges and place on the prepared baking sheet.
- Bake for 15-20 minutes or until golden brown.
- Cool slightly on a wire rack before serving.
Notes
- For added flavor, you can incorporate lemon zest or chocolate chips into the dough.
- Serve warm with clotted cream and jam for a traditional touch.
