A simple and flavorful dish featuring seared cod topped with a fresh tomato and basil sauce.
Ingredients

- 2 cod fillets (6 oz each)
- 1 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1 tbsp lemon juice
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a pan over medium-high heat.
- Season cod fillets with salt and pepper.
- Sear cod for 3-4 minutes per side until golden and cooked through. Remove from pan.
- In the same pan, add garlic and sauté for 30 seconds.
- Add cherry tomatoes and cook for 2-3 minutes until softened.
- Stir in basil and lemon juice, then season with salt and pepper.
- Spoon the tomato-basil sauce over the cod and serve.

- Use fresh cod for the best texture.
- Adjust garlic and lemon juice to taste.
- Serve with a side of rice or greens.
