Instructions

  1. Pat the scallops dry with paper towels.
  2. Season both sides of the scallops with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Add the scallops to the skillet in a single layer.
  5. Cook for 2-3 minutes until golden brown on one side.
  6. Flip the scallops and add butter to the skillet.
  7. Cook for another 2 minutes until opaque.
  8. Remove from heat and garnish with fresh parsley.
