Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for an additional 1 minute until fragrant.
  4. Pour in vegetable broth and add diced tomatoes, seasonal vegetables, thyme, oregano, salt, and pepper.
