- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (14.5 ounces) diced tomatoes
- 2 cups seasonal vegetables (e.g., zucchini, bell peppers, green beans)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach or kale
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Stir in minced garlic and cook for an additional 1 minute until fragrant.
- Pour in vegetable broth and add diced tomatoes, seasonal vegetables, thyme, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender.
- Stir in fresh spinach or kale and cook for another 5 minutes until wilted.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
