- 1 onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 can (14 oz) diced tomatoes
- Salt and pepper, to taste
- 4 large eggs
- 1/2 cup feta cheese, crumbled
- Fresh herbs (parsley, cilantro, or dill), for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper, cooking until softened, about 5-7 minutes.
- Stir in the garlic, cumin, and smoked paprika. Cook for another minute until fragrant.
- Add the diced tomatoes (with their juices) to the skillet. Season with salt and pepper. Simmer for about 10-15 minutes until the sauce thickens slightly.
- Using a spoon, create small wells in the sauce and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set but yolks are still runny.
- Sprinkle the feta cheese over the shakshuka and garnish with fresh herbs before serving.
