Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper, to taste
  • 4 large eggs
  • 1/2 cup feta cheese, crumbled
  • Fresh herbs (parsley, cilantro, or dill), for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper, cooking until softened, about 5-7 minutes.
  2. Stir in the garlic, cumin, and smoked paprika. Cook for another minute until fragrant.
  3. Add the diced tomatoes (with their juices) to the skillet. Season with salt and pepper. Simmer for about 10-15 minutes until the sauce thickens slightly.
  4. Using a spoon, create small wells in the sauce and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set but yolks are still runny.
  5. Sprinkle the feta cheese over the shakshuka and garnish with fresh herbs before serving.

  • Serve with crusty bread or pita for dipping.
  • Feel free to add other vegetables like zucchini or spinach for extra nutrition.
