Delicious cupcakes inspired by the classic shamrock shake.
Ingredients

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon mint extract
- Green food coloring
- 1 cup whipped cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, cocoa powder, baking powder, and salt.
- Add butter, eggs, milk, vanilla, and mint extract. Mix until smooth.
- Add green food coloring until desired color is achieved.
- Fill cupcake liners with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool the cupcakes completely.
- Top with whipped cream before serving.
Notes
- Adjust the mint extract to your taste.
- Store cupcakes in an airtight container.
- Can be decorated with chocolate shavings.
