A refreshing and light salad featuring thinly shaved zucchini tossed in a zesty lemon vinaigrette, perfect for summer.
Ingredients

- 4 medium zucchinis
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup toasted pine nuts
- Fresh basil leaves for garnish
Instructions
- Using a vegetable peeler or mandoline, shave the zucchinis into thin ribbons.
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, Dijon mustard, salt, and pepper until well combined.
- In a large bowl, toss the shaved zucchini with the lemon vinaigrette until evenly coated.
- Add the grated Parmesan cheese and toasted pine nuts, and toss gently to combine.
- Garnish with fresh basil leaves before serving.
