- 4 boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 2 cups broccoli florets
- 1/4 cup unsalted butter, melted
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine melted butter, minced garlic, thyme, rosemary, salt, and pepper.
- Place chicken breasts on one side of a large sheet pan.
- In a separate bowl, toss the halved baby potatoes with half of the garlic butter mixture.
- Arrange the seasoned potatoes on the other side of the pan.
- Pour the remaining garlic butter mixture over the chicken breasts and toss to coat.
- Add the broccoli florets to the pan, drizzling with a little olive oil and seasoning with salt and pepper.
- Bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
- Feel free to swap out vegetables based on your preference or what you have on hand.
- For extra flavor, marinate the chicken in the garlic butter mixture for 30 minutes before baking.
