Ingredients

- 1 cup almond flour
- 1/2 cup protein powder
- 1/4 cup honey
- 1/4 cup almond butter
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/4 cup unsweetened shredded coconut
Instructions
- In a bowl, mix almond flour and protein powder.
- Add honey, almond butter, lemon zest, lemon juice, and salt. Stir well.
- Fold in shredded coconut.
- Roll mixture into small balls.
- Place balls on a baking sheet and refrigerate for at least 30 minutes.
- Store in an airtight container in the fridge.
Notes
- Adjust sweetness by adding more or less honey.
- For a vegan option, substitute honey with maple syrup.
- These can be frozen for longer storage.
