Description
A quick and tasty shrimp fried rice with mixed vegetables, perfect for a weeknight dinner.
Ingredients

- 2 cups cooked rice (preferably day-old)
- 1/2 lb shrimp, peeled and deveined
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 cloves garlic, minced
- 2 eggs, beaten
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp vegetable oil
- 1/2 tsp sesame oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a pan over medium-high heat.
- Add shrimp and cook until pink, about 2 minutes. Remove and set aside.
- In the same pan, add garlic and sauté for 30 seconds.
- Add mixed vegetables and stir-fry for 2 minutes.
- Push vegetables to one side, pour beaten eggs into the pan, and scramble.
- Add rice, soy sauce, oyster sauce, and sesame oil. Stir well.
- Return cooked shrimp to the pan and mix everything together.
- Season with salt and pepper to taste.
- Cook for another 2 minutes, then serve hot.
Notes
- Use day-old rice for best texture.
- Adjust soy sauce to taste if needed.
- Add chili flakes for extra spice.
