Description

A quick and tasty shrimp fried rice with mixed vegetables, perfect for a weeknight dinner.


Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1/2 lb shrimp, peeled and deveined
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp vegetable oil
  • 1/2 tsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a pan over medium-high heat.
  2. Add shrimp and cook until pink, about 2 minutes. Remove and set aside.
  3. In the same pan, add garlic and sauté for 30 seconds.
  4. Add mixed vegetables and stir-fry for 2 minutes.
  5. Push vegetables to one side, pour beaten eggs into the pan, and scramble.
  6. Add rice, soy sauce, oyster sauce, and sesame oil. Stir well.
  7. Return cooked shrimp to the pan and mix everything together.
  8. Season with salt and pepper to taste.
  9. Cook for another 2 minutes, then serve hot.

Notes

  • Use day-old rice for best texture.
  • Adjust soy sauce to taste if needed.
  • Add chili flakes for extra spice.
