A refreshing shrimp pasta salad perfect for summer gatherings.
Ingredients

- 8 oz pasta (penne or fusilli)
- 1 lb cooked shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Cook pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine pasta, shrimp, cherry tomatoes, cucumber, and red onion.
- In a small bowl, whisk olive oil, lemon juice, salt, and black pepper.
- Pour dressing over pasta mixture and toss gently.
- Sprinkle fresh parsley on top.
- Chill for at least 30 minutes before serving.

- Use chilled shrimp for best texture.
- Add avocado slices for extra creaminess.
- Adjust lemon juice and salt to taste.
