  • 2 tablespoons Olive oil

  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin

  • 8 Corn tortillas
  • 1 Mango, diced
  • 1/4 cup Red onion, diced
  • 1/4 cup Cilantro, chopped
  • 1 (optional) Jalapeño, minced
  • for serving Lime wedges

Instructions

  1. In a bowl, combine the shrimp, olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Toss to coat and let marinate for 15 minutes.
  2. While the shrimp is marinating, prepare the mango salsa by mixing the diced mango, red onion, cilantro, jalapeño (if using), and a pinch of salt in a separate bowl. Set aside.
  3. Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
  4. Warm the corn tortillas in another skillet or directly over a flame until soft and pliable.
