- 1 pound Medium shrimp, peeled and deveined
- 2 tablespoons Olive oil
- 2 tablespoons Lime juice
- 1 teaspoon Garlic powder
- 1 teaspoon Cumin

- 8 Corn tortillas
- 1 Mango, diced
- 1/4 cup Red onion, diced
- 1/4 cup Cilantro, chopped
- 1 (optional) Jalapeño, minced
- for serving Lime wedges
Instructions
- In a bowl, combine the shrimp, olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Toss to coat and let marinate for 15 minutes.
- While the shrimp is marinating, prepare the mango salsa by mixing the diced mango, red onion, cilantro, jalapeño (if using), and a pinch of salt in a separate bowl. Set aside.
- Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
- Warm the corn tortillas in another skillet or directly over a flame until soft and pliable.
- Assemble the tacos by placing a few shrimp on each tortilla, topping with mango salsa, and serving with lime wedges on the side.
