Ingredients

  • 1 cup fresh cranberries
  • 1 orange, juiced and zested
  • 2 tbsp honey

  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt, pepper, and thyme.
  3. Cook chicken for 5-6 minutes per side until golden brown.
  4. Remove chicken from skillet and set aside.
  5. In the same skillet, add cranberries, orange juice, zest, honey, and chicken broth.
  6. Simmer for 3-4 minutes until cranberries soften.
  7. Return chicken to the skillet and coat with the sauce.
  8. Cook for another 2-3 minutes until chicken is fully cooked.
  9. Serve warm.
