- 2 lbs beef chuck, cut into cubes
- 1 large onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a pan and brown the beef cubes on all sides. Transfer to the slow cooker.
- Add onion, carrots, potatoes, celery, and garlic to the slow cooker.
- In a bowl, mix beef broth, tomato paste, thyme, rosemary, salt, and pepper. Pour over the ingredients in the slow cooker.
- Add the bay leaf.
- Cover and cook on low for 8 hours or on high for 4-5 hours.
- Remove the bay leaf before serving.
Notes
- For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew 30 minutes before serving.
- Store leftovers in an airtight container for up to 3 days.
