Ingredients

- 2 lbs beef short ribs
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 2 cups beef broth
- 1 tbsp tomato paste
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 2 tbsp butter
Instructions
- Heat olive oil in a pan and sear the short ribs on all sides.
- Add onion, carrots, celery, and garlic. Cook for 5 minutes.
- Transfer everything to a slow cooker. Add beef broth, tomato paste, salt, pepper, and thyme.
- Cook on low for 6-8 hours until the meat is tender.
- Boil potatoes until soft. Drain and mash with milk and butter.
- Serve the short ribs over mashed potatoes.
Notes
- Use a slow cooker for best results.
- Trim excess fat from the ribs for a leaner dish.
- Adjust seasoning to taste.
