- 3 lbs beef chuck roast, trimmed and cut into chunks
- 4 cloves garlic, minced
- 1 onion, chopped
- 1/4 cup lime juice
- 2 tbsp apple cider vinegar
- 2 tbsp tomato paste
- 2 tbsp ground cumin
- 1 tbsp dried oregano
- 1 tbsp smoked paprika
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp ground cloves
- 1/2 cup beef broth
- 2 bay leaves
Instructions
- Place beef chunks in the slow cooker.
- Add garlic, onion, lime juice, apple cider vinegar, tomato paste, cumin, oregano, smoked paprika, salt, black pepper, and cloves. Mix well.
- Pour beef broth over the beef and add bay leaves.
- Cover and cook on low for 8 hours or high for 4-5 hours, until beef shreds easily.
- Remove bay leaves and shred the beef with two forks.
- Serve in tacos, burritos, or rice bowls.
Notes
- Use a slow cooker liner for easy cleanup.
- For extra flavor, sear the beef before adding to the slow cooker.
- Store leftovers in an airtight container for up to 3 days.
