- 2 lbs beef chuck roast, cut into cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp black pepper
- 1/2 tsp salt
- 2 tbsp cornstarch
- 2 tbsp water
- 4 cups mashed potatoes (for serving)
Instructions
- Place beef cubes, onion, and garlic in the slow cooker.
- Add beef broth, cream of mushroom soup, Worcestershire sauce, thyme, pepper, and salt. Stir to combine.
- Cover and cook on low for 7-8 hours or high for 4-5 hours, until beef is tender.
- Mix cornstarch and water in a small bowl. Stir into the slow cooker to thicken the gravy.
- Cook for an additional 15 minutes until gravy thickens.
- Serve hot over mashed potatoes.

- Use a lean cut of beef to reduce fat.
