A hearty and flavorful chili made with chicken, peppers, and spices in a slow cooker.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 can (4 oz) diced green chilies
- 2 cups chicken broth
- 2 tbsp fajita seasoning
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Place chicken breasts in the slow cooker.
- Add bell peppers, onion, black beans, diced tomatoes, green chilies, and chicken broth.
- Sprinkle fajita seasoning, cumin, chili powder, salt, and black pepper over the ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove chicken, shred it, and return to the slow cooker.
- Stir well and serve hot with your favorite toppings.
Notes
- For extra heat, add jalapeños or hot sauce.
- Serve with shredded cheese, sour cream, or avocado.
- Leftovers store well in the fridge for up to 3 days.
