Description

A hearty and flavorful chili made with chicken, peppers, and spices in a slow cooker.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies
  • 2 cups chicken broth
  • 2 tbsp fajita seasoning
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add bell peppers, onion, black beans, diced tomatoes, green chilies, and chicken broth.
  3. Sprinkle fajita seasoning, cumin, chili powder, salt, and black pepper over the ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Remove chicken, shred it, and return to the slow cooker.
  6. Stir well and serve hot with your favorite toppings.

Notes

  • For extra heat, add jalapeños or hot sauce.
  • Serve with shredded cheese, sour cream, or avocado.
  • Leftovers store well in the fridge for up to 3 days.
