- 1.5 lbs (680g) boneless, skinless chicken thighs
- 1 can (13.5 oz / 400ml) coconut milk
- 3 tbsp curry powder
- 1 tbsp turmeric
- 1 tbsp grated ginger
- 3 cloves garlic, minced
- 1 medium onion, diced
- 1 red bell pepper, sliced
- 1 tbsp fish sauce (optional)
- 1 tbsp lime juice
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- Place chicken thighs in the slow cooker.
- In a bowl, mix coconut milk, curry powder, turmeric, ginger, garlic, fish sauce, lime juice, salt, and black pepper.
- Pour the mixture over the chicken.
- Add diced onion and red bell pepper.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred chicken lightly with a fork before serving.
- Garnish with fresh cilantro.
Notes
- For extra heat, add 1 chopped chili pepper.
- Serve with rice or naan bread.
- Leftovers store well in the fridge for up to 3 days.
