Ingredients

  • 1.5 lbs (680g) boneless, skinless chicken thighs
  • 1 can (13.5 oz / 400ml) coconut milk
  • 3 tbsp curry powder
  • 1 tbsp turmeric
  • 1 tbsp grated ginger
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1 red bell pepper, sliced
  • 1 tbsp fish sauce (optional)
  • 1 tbsp lime juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Place chicken thighs in the slow cooker.
  2. In a bowl, mix coconut milk, curry powder, turmeric, ginger, garlic, fish sauce, lime juice, salt, and black pepper.
  3. Pour the mixture over the chicken.
  4. Add diced onion and red bell pepper.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Shred chicken lightly with a fork before serving.
  7. Garnish with fresh cilantro.

Notes

  • For extra heat, add 1 chopped chili pepper.
