Description
A classic slow cooker dish featuring corned beef and cabbage.
Ingredients
Scale
- 3–4 pounds corned beef brisket
- 1 medium onion, quartered
- 4 cloves garlic, minced
- 4 medium carrots, chopped
- 1 small head of cabbage, cut into wedges
- 4 cups beef broth
- 2 tablespoons mustard
- 1 tablespoon black peppercorns
- 2 bay leaves
Instructions
- Place the corned beef in the slow cooker.
- Add the onion, garlic, and carrots around the beef.
- In a bowl, mix beef broth, mustard, peppercorns, and bay leaves. Pour over the beef.
- Cover and cook on low for 8-10 hours.
- In the last hour, add the cabbage wedges on top.
- Once done, remove the beef and let it rest before slicing.
- Serve with vegetables and broth.
Notes
- Adjust seasoning as needed after cooking.
- Leftovers can be stored in the fridge for up to 3 days.
