Description
A classic slow cooker recipe for tender corned beef and cabbage.
Ingredients

- 3 pounds corned beef brisket
- 1 large onion, chopped
- 4 carrots, sliced
- 4 potatoes, quartered
- 1 small head of cabbage, cut into wedges
- 2 cups beef broth
- 1 tablespoon mustard seeds
- 1 tablespoon black peppercorns
- 2 bay leaves
Instructions
- Place the corned beef in the slow cooker.
- Add the chopped onion, carrots, and potatoes around the beef.
- Pour beef broth over the ingredients.
- Add mustard seeds, peppercorns, and bay leaves.
- Cover and cook on low for 8 hours.
- After 7 hours, add cabbage wedges on top.
- Cook for an additional hour or until the cabbage is tender.
Notes
- Adjust seasoning to taste before serving.
- Save leftovers for sandwiches.
