Ingredients

  • 1 lb ground beef (80/20 blend)
  • 1 tbsp olive oil
  • 4 small flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onions
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 1 tbsp mustard
  • 1 tbsp ketchup
  • 2 large sweet potatoes (cut into fries)
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Toss sweet potato fries with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet and bake for 25 minutes, flipping halfway.
  2. Heat a skillet over medium-high heat. Divide ground beef into 4 equal portions and shape into loose balls.
  3. Place a ball in the skillet and press flat with a spatula to create a smash burger. Cook for 2-3 minutes per side until browned and crispy. Repeat for all patties.
  4. Mix mayonnaise, mustard, and ketchup in a small bowl to make the sauce.
  5. Warm tortillas in a dry skillet for 20 seconds per side.
  6. Assemble tacos: place a smash burger on each tortilla, top with lettuce, tomatoes, onions, cheese, and sauce.
  7. Serve immediately with sweet potato fries.
