  • 4 small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced onions
  • 1/4 cup diced tomatoes
  • 2 tbsp pickled jalapeños (optional)
  • 2 tbsp sour cream (optional)

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add ground beef, salt, pepper, garlic powder, and onion powder. Cook until browned, breaking it into small pieces.
  3. Remove beef from skillet and set aside.
  4. Place a tortilla in the skillet and sprinkle half with cheese, beef, onions, tomatoes, and jalapeños.
  5. Fold the tortilla in half and press down with a spatula.
  6. Cook for 2 minutes per side until golden and crispy.
  7. Repeat with remaining tortillas and filling.
  8. Slice into wedges and serve with sour cream if desired.
