- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon ground mustard

Instructions
- Preheat your smoker to 225°F (107°C).
- In a small bowl, mix together the salt, pepper, garlic powder, onion powder, smoked paprika, thyme, rosemary, and ground mustard.
- Rub the olive oil all over the prime rib roast, then coat the roast evenly with the spice mixture.
- Place the roast on the smoker, bone side down, and add wood chips to the smoker box or directly on the coals.
- Smoke the roast until it reaches your desired doneness: about 125°F (52°C) for medium-rare or 135°F (57°C) for medium, which takes approximately 4-6 hours.
- Remove the roast from the smoker, wrap it loosely in aluminum foil, and let it rest for at least 20-30 minutes.
