  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon ground mustard
  • Wood chips for smoking (hickory, oak, or cherry recommended)

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. In a small bowl, mix together the salt, pepper, garlic powder, onion powder, smoked paprika, thyme, rosemary, and ground mustard.
  3. Rub the olive oil all over the prime rib roast, then coat the roast evenly with the spice mixture.
  4. Place the roast on the smoker, bone side down, and add wood chips to the smoker box or directly on the coals.
  5. Smoke the roast until it reaches your desired doneness: about 125°F (52°C) for medium-rare or 135°F (57°C) for medium, which takes approximately 4-6 hours.
