- 6 large eggs
- 1/2 cup heavy cream
- 4 oz smoked salmon, chopped
- 1 cup diced potatoes
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh chives
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, whisk eggs and heavy cream. Add salt and pepper.
- Heat butter in an oven-safe skillet. Cook potatoes until golden.
- Pour egg mixture over potatoes. Add smoked salmon and herbs.
- Cook on stovetop for 2 minutes until edges set.
- Transfer to oven. Bake for 12-15 minutes until fully set.
- Let cool slightly before serving.

- Leftovers keep well in fridge for 2 days.
