Ingredients

  • 1/2 cup heavy cream
  • 4 oz smoked salmon, chopped
  • 1 cup diced potatoes
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk eggs and heavy cream. Add salt and pepper.
  3. Heat butter in an oven-safe skillet. Cook potatoes until golden.
  4. Pour egg mixture over potatoes. Add smoked salmon and herbs.
  5. Cook on stovetop for 2 minutes until edges set.
  6. Transfer to oven. Bake for 12-15 minutes until fully set.
  7. Let cool slightly before serving.
