Ingredients

  • 1 tbsp chipotle paste
  • 1 cup shredded cheddar cheese
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 cups corn kernels
  • 1/4 cup flour
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 2 tbsp chopped cilantro
  • Salt and pepper to taste
  • 4 burger buns
  • 1 tbsp oil for frying

Instructions

  1. Mix ground beef, chipotle paste, cheddar, egg, and breadcrumbs in a bowl.
  2. Shape into 4 patties and refrigerate for 15 minutes.
  3. For fritters: blend corn, flour, cumin, chili powder, cilantro, salt, and pepper.
  4. Heat oil in a pan and fry spoonfuls of corn mixture until golden.
  5. Grill or pan-fry burgers for 4-5 minutes per side.
  6. Toast buns and assemble burgers with your favorite toppings.
