Ingredients

- 2 cups pasta (elbow or penne)
- 2 ears of corn, grilled and kernels removed
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1/4 cup crumbled feta cheese
- 2 tbsp fresh cilantro, chopped
- 1 tbsp lime juice
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, mix mayonnaise, sour cream, smoked paprika, chili powder, lime juice, salt, and pepper.
- Add cooked pasta, grilled corn, feta cheese, and cilantro to the bowl. Toss to coat evenly.
- Chill for 30 minutes before serving.
