Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 medium potatoes, cubed
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. Heat olive oil in a large skillet over medium heat. Sear the chicken breasts on both sides until golden brown, then remove and set aside.
  4. In the same skillet, add flour and stir to create a roux. Gradually whisk in chicken broth and heavy cream to make a smooth gravy.
  5. Return the chicken to the skillet, coating it with the gravy. Simmer for 5 minutes.
  6. Toss the cubed potatoes with olive oil, parsley, rosemary, thyme, salt, and pepper. Spread them on a baking sheet.
  7. Place the skillet with chicken in the oven, and roast the potatoes on a separate rack for 25-30 minutes, until both are cooked through.
  8. Serve the smothered chicken with herb potatoes on the side.
