Instructions

  1. Heat olive oil in a large pot over medium heat.

  3. Stir in garlic and cook for 1 minute.
  4. Add vegetable broth, diced tomatoes, basil, and oregano.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper.
  7. Stir in spinach and cook until wilted.
  8. Serve hot.
