  • 4 cups beef broth

  • 1 medium carrot, diced
  • 2 medium potatoes, diced
  • 1 cup cooked beef sausage, sliced
  • 2 eggs
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  2. Add the diced carrots and potatoes, cooking for another 5 minutes.
  3. Pour in the beef broth and bring to a boil. Reduce heat and simmer until the vegetables are tender, about 15 minutes.
  4. Stir in the sour rye starter and sliced beef sausage. Simmer for an additional 10 minutes.
  5. In a separate bowl, beat the eggs. Slowly add a ladle of hot soup to the eggs while whisking to temper them.
  6. Pour the egg mixture back into the pot, stirring gently to combine. Cook for a few more minutes until the eggs are cooked through.
  7. Season with salt and pepper to taste. Garnish with fresh dill before serving.
