- 1 cup sour rye starter
- 4 cups beef broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 2 medium potatoes, diced
- 1 cup cooked beef sausage, sliced
- 2 eggs
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, sauté the chopped onion and minced garlic until translucent.
- Add the diced carrots and potatoes, cooking for another 5 minutes.
- Pour in the beef broth and bring to a boil. Reduce heat and simmer until the vegetables are tender, about 15 minutes.
- Stir in the sour rye starter and sliced beef sausage. Simmer for an additional 10 minutes.
- In a separate bowl, beat the eggs. Slowly add a ladle of hot soup to the eggs while whisking to temper them.
- Pour the egg mixture back into the pot, stirring gently to combine. Cook for a few more minutes until the eggs are cooked through.
- Season with salt and pepper to taste. Garnish with fresh dill before serving.
