- 1 cup cooked rice
- 1/2 cup black beans, drained
- 1/2 cup corn kernels
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- 1 lime, juiced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add diced chicken and season with chili powder, cumin, paprika, and salt.
- Cook chicken until browned and fully cooked, about 8 minutes.
- In a bowl, layer cooked rice, black beans, corn, and chicken.
- Top with diced red onion, cilantro, and avocado.
- Squeeze lime juice over the bowl before serving.
