Ingredients

- 1 lb chicken breast, diced
- 1 lb shrimp, peeled and deveined
- 1 cup long-grain rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 tsp hot sauce (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned, about 5 minutes.
- Stir in onion, bell pepper, celery, and garlic. Cook for 3 minutes.
- Add rice, Cajun seasoning, and diced tomatoes. Mix well.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Add shrimp and cook for 5 more minutes.
- Adjust seasoning with hot sauce if desired.
- Serve hot.
Notes
- Use fresh shrimp for best flavor.
- Adjust spice level with more or less Cajun seasoning.
- Let it rest for 5 minutes before serving.
