Ingredients

  • 1 lb chicken breast, diced
  • 1 lb shrimp, peeled and deveined
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 tsp hot sauce (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Stir in onion, bell pepper, celery, and garlic. Cook for 3 minutes.
  4. Add rice, Cajun seasoning, and diced tomatoes. Mix well.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Add shrimp and cook for 5 more minutes.
  8. Adjust seasoning with hot sauce if desired.
  9. Serve hot.
