Ingredients

  • 4 cups vegetable broth
  • 2 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon chili paste or Sriracha
  • 1 tablespoon sesame oil
  • 2 packs of ramen noodles (discard the seasoning packets)
  • 1 cup sliced mushrooms
  • 1 cup chopped bok choy
  • 1 cup sliced green onions
  • 1 cup spinach
  • 2 boiled eggs, halved (optional)
  • Sesame seeds for garnish
  • Chili oil for drizzle (optional)

Instructions

  1. In a large pot, heat the sesame oil over medium heat.
  2. Add the sliced mushrooms and sauté until they are tender, about 5 minutes.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Stir in the miso paste, soy sauce, and chili paste until well combined.
  5. Add the ramen noodles and cook according to package instructions, usually about 3-4 minutes.
  6. In the last minute of cooking, add the bok choy and spinach to the pot.
  7. Remove from heat and serve the ramen in bowls.
  8. Top each bowl with halved boiled eggs, chopped green onions, sesame seeds, and a drizzle of chili oil if desired.

Notes

  • Feel free to add any other vegetables you like, such as bell peppers or carrots.
  • For extra protein, consider adding tofu or cooked chicken.
