Ingredients

- 4 cups vegetable broth
- 2 tablespoons miso paste
- 1 tablespoon soy sauce
- 1 tablespoon chili paste or Sriracha
- 1 tablespoon sesame oil
- 2 packs of ramen noodles (discard the seasoning packets)
- 1 cup sliced mushrooms
- 1 cup chopped bok choy
- 1 cup sliced green onions
- 1 cup spinach
- 2 boiled eggs, halved (optional)
- Sesame seeds for garnish
- Chili oil for drizzle (optional)
Instructions
- In a large pot, heat the sesame oil over medium heat.
- Add the sliced mushrooms and sauté until they are tender, about 5 minutes.
- Pour in the vegetable broth and bring to a simmer.
- Stir in the miso paste, soy sauce, and chili paste until well combined.
- Add the ramen noodles and cook according to package instructions, usually about 3-4 minutes.
- In the last minute of cooking, add the bok choy and spinach to the pot.
- Remove from heat and serve the ramen in bowls.
- Top each bowl with halved boiled eggs, chopped green onions, sesame seeds, and a drizzle of chili oil if desired.
Notes
- Feel free to add any other vegetables you like, such as bell peppers or carrots.
- For extra protein, consider adding tofu or cooked chicken.
