  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 2 tbsp ginger, grated
  • 3 medium tomatoes, blended
  • 2 red bell peppers, blended
  • 2 scotch bonnet peppers, blended
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp curry powder
  • 1 tsp bouillon powder
  • Salt to taste

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add onions, garlic, and ginger. Sauté for 2 minutes.
  3. Stir in blended tomatoes, peppers, and tomato paste. Cook for 10 minutes.
  4. Add thyme, curry powder, bouillon powder, and salt. Mix well.
  5. Add chicken pieces and coat them evenly with the sauce.
  6. Cover and simmer for 30 minutes or until chicken is cooked.
  7. Stir occasionally to prevent burning.
