Ingredients

- 1 whole chicken, cut into pieces
- 3 tbsp vegetable oil
- 2 medium onions, chopped
- 4 cloves garlic, minced
- 2 tbsp ginger, grated
- 3 medium tomatoes, blended
- 2 red bell peppers, blended
- 2 scotch bonnet peppers, blended
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp curry powder
- 1 tsp bouillon powder
- Salt to taste
Instructions
- Heat oil in a pot over medium heat.
- Add onions, garlic, and ginger. Sauté for 2 minutes.
- Stir in blended tomatoes, peppers, and tomato paste. Cook for 10 minutes.
- Add thyme, curry powder, bouillon powder, and salt. Mix well.
- Add chicken pieces and coat them evenly with the sauce.
- Cover and simmer for 30 minutes or until chicken is cooked.
- Stir occasionally to prevent burning.
Notes
- Adjust pepper quantity based on heat preference.
- Serve with rice, yam, or plantains.
- Store leftovers in the fridge for up to 3 days.
