- 1 whole chicken, cut into pieces
- 2 large onions, chopped
- 4 tomatoes, blended
- 2 red bell peppers, blended
- 2 scotch bonnet peppers (or habanero), blended
- 3 tbsp vegetable oil
- 2 tsp curry powder
- 1 tsp thyme
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp ginger powder
- 1 chicken stock cube
- Salt to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add chopped onions and sauté until translucent.
- Stir in blended tomatoes, peppers, and spices.
- Cook the mixture until the sauce thickens.
- Add chicken pieces and coat well with the sauce.
- Pour in half a cup of water and cover.
- Simmer for 25-30 minutes until chicken is tender.
- Adjust seasoning if needed and serve hot.
