- 4 large potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add diced potatoes, broth, paprika, and cayenne pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Blend soup until smooth, then stir in milk.
- Season with salt and pepper, and serve hot.
