Description

Delicious and crispy rice bites topped with spicy tuna, perfect as an appetizer or snack.


Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 pound sushi-grade tuna, diced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 1 avocado, sliced
  • Sesame seeds for garnish
  • Green onions for garnish
  • Soy sauce for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a medium pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed.
  3. While the rice is cooking, combine rice vinegar, sugar, and salt in a small saucepan over medium heat. Stir until sugar and salt dissolve. Remove from heat.
  4. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.
  5. In a separate bowl, mix the diced tuna, mayonnaise, and sriracha until well combined. Set aside.
  6. Once the rice is cool, form small squares or rectangles using your hands, about 1/2 inch thick.
  7. Heat a non-stick skillet over medium heat and add a little oil. Fry the rice bites until golden brown and crispy on both sides, about 2-3 minutes per side.
  8. Top each crispy rice bite with a dollop of the spicy tuna mixture and a slice of avocado.
  9. Garnish with sesame seeds and sliced green onions. Serve with soy sauce.

Notes

  • For added flavor, consider adding a splash of lime juice to the tuna mixture.
  • Adjust the amount of sriracha based on your spice preference.
  • These bites are best enjoyed fresh but can be stored in the refrigerator for a few hours.
